The centrepiece of a traditional Australian Christmas table is a roast pork with a scrumptious crackling or a glazed ham, plenty of roasted vegetables, and fresh seafood which is often followed up with a Christmas pudding served with custard. This spread can be traced back to early pagan and Christian times with British, Germanic and Nordic roots. The roast pork and ham is said to be linked to Freyr, a Germanic god who sacrificed wild boar for yuletide. The preparation of this dish has also evolved. Working class families in 1800s had to use all parts of pigs and the pork rind was no exception, cooked or fried to high temperature to become a high protein food. The Glazed ham, glazed with sugar, appeared around 1930s and continues to be popular for an Australian summer. A plump Christmas pudding is a fruit cake that is traditionally bag-boiled. Various versions of this pudding appeared throughout culinary history but it appeared in its current form, with a sprig of holly as garnish, appeared in a cookbook in 1845. The custom of eating this pudding for Christmas was carried to many parts of the British Empire. Christmas is celebrated around the world and traditions vary.
